It’s James Beard Awards week here at The Download! Each night we’ll chat with some of the finest culinary minds working in the city. Tonight, restaurateur Nick Kokonas (Alinea, Next, The Aviary) joins Justin to talk about the upcoming James Beard Awards, the recent changes over at Alinea, branching outside of Chicago, the future of restaurant ticketing, training and bringing in new talent, working with acclaimed chef Grant Achatz, the culture they have built over the years and the Chicago culinary scene and the importance of the Beard Awards being in the city.
