Warm Chocolate Pots de Creme

INGREDIENTS
Semi-Sweet Chocolate Chips – 5 ounces
Butter – 1 stick, unsalted, plus more for preparing ramekins
Vanilla – 2 teaspoons, pure extract
Flour – 6 tablespoons, all-purpose
Eggs – 2 extra-large eggs, AND 1 extra-large egg yolk
Kosher Salt – ¼ teaspoon
Powdered Sugar – 1 cup, plus more for dusting
Raspberries
 

DIRECTIONS
Start by pre-heating the oven to 425 degrees.
Butter the interior of four 6 to 8 ounce ramekins and place on a baking dish.  Set aside.
In a heat proof bowl , over barely simmering water, melt the chocolate and butter, stirring occasionally until just melted.  Remove from heat.
Next, add the powdered sugar, salt, and vanilla.  Whisk until blended.
Slowly whisk in the eggs.
Then whisk into the chocolate mixture.
Lastly, evenly divide the batter into the prepared ramekins.  Bake for exactly 15 minutes.  Remove from the oven, dust with powdered sugar.  Allow to stand for 2 minutes before serving.
TIP: To give this dessert a little love-day punch, place a small paper doily with a heart cut from the center over each ramekin and dust with powdered sugar.  Carefully remove the doily and excess powdered sugar before serving.

TRICK:  You can actually make these ahead of time!  Bake and dust with powdered sugar. Allow to cool completely, then wrap tightly with foil and place in the refrigerator.  When it’s time to serve, remove from the refrigerator 15 minutes prior.  Discard the foil and warm in a microwave for 45 seconds.  Serve immediately.

Esther and Dane’s Easy Reesey Peanut Butter Bars

2 cups Keebler Graham Cracker Crumbs
1/4 cup brown sugar
1 3/4 cup powdered sugar
1 cup peanut butter
1/2 tsp. vanilla
1 cup salted butter (melted)
2 cups semi-sweet milk chocolate chips

Combine first 6 ingredients in order as listed into a mixing bowl. Mix well and stir until the mixture is creamy and spread into a 9×13 pan.
Melt chocolate chips in the microwave (at 50% power) for 2 minutes. Stir chocolate (if chocolate needs more melting microwave for an additional minute at 50% power) then spread over the peanut butter mixture.  Cover and refrigerate bars for at least one hour then let the dessert sit out for 10 minutes for easy cutting into squares/bars. Refrigerate bars until ready to serve and refrigerate leftovers.  Share and enjoy!!!

Blend all the ingredients into a blender, pour into a glass, and watch your baby swoon!

There’s no better way to celebrate Valentine’s Day than baking for your special someone. Lou Manfredini and his wife Mary Beth show Hannah and Dane how to make their famous Heart Shaped Scones. Here’s the recipe:

The Manfredini’s Heart Shaped Scones

Preheat oven to 400 degrees

1 ½ cups flour
1/3 cup sugar
1 tsp baking powder
½ tsp baking soda
2/3 cup buttermilk
1/3 cup melted butter
2/3 cup blueberries or chocolate chips (or whatever you want to put in)

Mix together with a fork until mix is sticky. Put on greased cookie sheet and bake for about 10-12 minutes.  Enjoy!
