Hannah’s Spinach Pasta
This recipe is an easy go-to for after work meal, or to utilize leftovers such as rotisserie chicken.
- 1 lb pasta
- Baby Spinach
- 1 Tbsp Olive Oil
- 1 Clove Garlic
- Lemon Juice
- Mascarpone Cheese 8 oz
- Grape Tomatoes 10
- Chicken Breast
- Lemon Zest
Cook pasta as directed
While pasta is cooking…
Warm 1 Tbsp of Olive oil and add in 1 clove of minced garlic. Add in spinach and sauté until wilted. Remove spinach from pan and chop.Place chopped spinach back into pan and put heat back on low.
Add mascarpone cheese to pan with spinach. Stir cheese continually as it melts down.
Add a bit of pasta water to pan to help thin the sauce just a bit, and help it adhere to the pasta. Strain pasta and transfer pasta into pan with spinach and sauce. Stir gently to cover all pasta with sauce.
Season with lemon juice, salt and pepper to taste.
Stir in quartered grape tomatoes and diced chicken (or protein of choice)
